Biography

I am Professor of Food Science (responsibilities in Meat Technology) at the University of Copenhagen (Dk). I hold a PhD at the University of Extremadura (Spain), where I was Assistant and Associate Professor for 20 years. I have also been postdoc in Foulum Research Center (Dk) and Cornell University (USA).
