Maoshen Chen received the B.S. degree in Food Science and Technology from Jiangnan University, Wuxi, China, in 2009.07 and the Ph.D degree in Food Science from Jiangnan University, Wuxi, China, in 2015.01. He is a professor and currently working in School of Food Science and Technology, Jiangnan University, Wuxi, China. His research interests include Food Hydrocolloids and Food Chemistry.
