Biography

My areas of expertise span the structure and functionality of foods (mammalian milk and plant-based products) both the changes in physical functionality brought about by processing and the impact this could have on digestibility, nutrition and immunity.
I have experience in project/ team management and thought leadership.

Areas of focus include:
1. Cross-disciplinary projects linking on-farm dairy production parameters to post farm gate consumer-centric dairy product quality attributes
2. Understanding bio-based products for pet foods and human food, including milk, meat, plant- based milk alternatives, hybrid animal-plant products (beverages, cheese, quinoa and pea)
a. Product properties: composition, processing, structure, stability, flavour
b. Product nutrition: bioactivity, digestibility, host microbe interactions, innate immunity, mucosal immunology
3. Development of in-vitro cell culture models and 3Rs
4. Immunology
