Biography
He is a Food Technologist, with a Master's in Food Science and Technology. He was a technical fellow in the Ilex paraguariensis project as a functional component in the development of food processes and products-CNPq, focusing on the protection of the bioactive compounds of yerba mate through microencapsulation and their incorporation into different matrices. He is currently a doctoral student in Biochemical-Pharmaceutical Technology and is part of the research group on Microbial Biomolecules at the University of São Paulo.
