Biography

I am a senior food scientist and synthetic biologist, Alumni from the Alexander von Humboldt Foundation, and currently working at IATA-CSIC. My research focuses on the rational design of microbial biofactories, including engineered microorganisms and starter cultures, to generate value-added products from industrial residues. I have specialized in applying multi-omics approaches to re-engineer products and processes in the food industry, with particular emphasis on enhancing flavor profiles and bioactivity. Throughout my career, I have published 30 peer-reviewed articles, which highlight my ability to drive significant advancements in synthetic biology, metabolic engineering, and microbial ecology. I have experience in research and teaching food biochemistry, food microbiology, synthetic biology, microbial ecology, genome/transcriptome mining, metabolic engineering, and molecular biotechnology.
