Biography

Dr. Dike O. Ukuku has 30 years of professional experience in teaching and doing research at universities and industry including 22 years in ARS as a Research Food Technologist at the Eastern Regional Research Center (ERRC), United States Department of Agriculture (USDA), Agricultural Research Services (ARS). Dr. Ukuku has authored more than 100 scientific publications including 14 proceedings, 18 invited book chapters, 2 books and has more than 120 scientific presentations at national and international meetings. He is a Fellow of the Japan Society for the Promotion of Science and a King-Chavez-Park Future Faculty Fellow. He is a member of the Science Advisory Board, and is on the editorial board of several scientific journals. Dr. Ukuku has advised/mentored several college students, summer students including post doctoral students.
