Biography
I was graduated in Agricultural Engenieering in 2005, two years later I got the Bacherlor's Degree in Food Science and Technology and I defense my pHD in 2010, all at University of Vigo. A Master's Degree in Food Science and a Master's degree in Climate Change complete my education. Food Quality and Security has been my main research area at University of Vigo. The validation and optimization of analytical methods to quantify phenolic profile in food was employed to study various factors that may affect it. After this, I made a stay in the Meat Technological Centre where I worked on the study of the addition of natural phenolics to meat products to assess their antioxidant effect. After that, I got a fellowship to work in the Service of Synthesis of High Added Value Molecules (IQAC-CSIC). The main line of work there falls within the area of biomedical chemistry and it focuses on the purification by chromatographic technics of drugs and the development of analytical methods that allow the characterization of impurities That is, not only the compounds and their impurities have been characterized if not methods to determine and quantify several metabolites responsible of the development of the disease were optimized and validated. I´m currently working at University of Porto after getting another postdoc fellowship. The line of research here is based on study of interactions polyphenol-protein and the health outcomes, mainly focused in the use of polypehnols as modulators of Immune Reactions to Foods.
