Biography
Sara is a Sudanese researcher who graduated from the Faculty of Agriculture at the University of Khartoum, Sudan, majoring in Biochemistry and Food Science. She earned her master’s and doctoral degrees in Natural Products and Bio-functional Chemistry from the Faculty of Agriculture, Tottori University, Japan. She is an assistant professor at the School of Health Sciences, Ahfad University for Women.
Sara was a joint researcher in the project Ethnopharmacological investigation of novel bioactive compounds from Sudanese plants between Japan and Sudan. Then, she worked as a researcher at the Department of Food Science and Nutrition, Faculty of Agriculture and Forestry, Helsinki University. Currently working as a researcher at the Laboratory of Organic Chemistry, Faculty of Agriculture, Tottori University.
Her research centers on traditional foods and medicines derived from plants and animals, exploring bioactive chemicals and their links to traditional uses. Sara has identified various compounds and studied their biological activities against the virulence factors of pathogenic bacteria. Recently, she has turned her attention to volatile compounds, aiming to uncover their biological activities that are responsible for their role in traditional practices and therapies.
