Biography
Professor Hiroaki Yoshimoto is a professor at the Department of Food Development Science, Faculty of Health and Nutrition, Minami Kyushu University, where he leads the Food Development Science Research Laboratory[1]. After majoring in psychology at Waseda University, he joined the management of his family's mushroom farm and obtained a doctorate in agriculture from Kyushu University[1]. He then served as a professor at Daiichi Institute of Technology, and has been a professor at Minami Kyushu University since 2020[1][2].
