Biography
Dr Margaret Murray is a Dietitian and Senior Lecturer with the Department of Health Science and Biostatistics, at Swinburne University of Technology. Margaret has a passion for delivering authentic and engaging education. She developed two new units in the multi-disciplinary Master of Food Science and Agribusiness, delivering the food, nutrition and human health content. These units are a culmination of her interests in nutrition, health and sustainability, and consider the challenges facing our food system of delivering a healthy and sustainable diet for all. This includes a collaboration with the Sustainable Nutrition Initiative and use of their DELTA Model as a teaching tool.
Margaret's research specialisation is coordinating human clinical trials, including both postprandial and long-term interventions. Her research focuses on investigating the health impacts of bioactive compounds in food. She has coordinated multiple human clinical research studies and is comfortable using both qualitative and quantitative methods. Margaret is also interested in research for the improvement of education, as well as research focusing on nutrition in the context of food systems and planetary health.
Margaret has completed a Certificate IV in Leadership and Management and has demonstrated leadership in the elected position of Faculty Early Career Researcher (ECR) representative and committee Chair (2020-21), Faculty ECR Symposium committee Chair (2022-23), and has contributed in other roles including Wellbeing Champion and Green Impact program team leader.
